I'm baking again!

I use to bake a fair bit before whilst at uni and kept me focused and was a good distraction from other issues on my mind at that time.. Fast forward a couple years and I'm at the point in my life where I need a proper hobby and so what better than making my favourite type of food: Dessert!!!! 
P.s. I know not all desserts involve baking. 

So here's what I made today:
Banana Muffins - I know it's an easy recipe but it's always best to start back at the basics!
250g Self-Raising Flour
150g Oat Bran
185g Caster Sugar 
2 eggs (lightly beaten)
185ml Milk
60g Butter (melted)
2 Ripe Bananas (mashed)

1. Preheat oven to Gas Mark 6 and prepare your muffin tray. I just use cases in a muffin tray to save washing up battles!
2. Using a large mixing bowl, sift the flour and mix oat bran and sugar together. Make a well in the centre of bowl.
3. Mix the eggs, milk, butter and banana and then pour into the well all together in one go. 
4. Using a wooden spoon stir the ingredients together but don't over beat, it should stay lumpy.
5. Spoon the mixture into the cases, fill it 3/4 up to the top so they rise well and cook for 15-20 mins. You know they are cooked when they are puffed up and golden brown.
